January's Class Topic: Comfort Foods, In the Raw!
March's Topic: Grape Varietals
The class will be exploring the unique characteristics of a few of the most popular grape varietals: Cabernet Sauvginon, Merlot, and Syrah/Shiraz. We will be tasting a pair of each varietal, discovering first hand the differences in flavor and structure between the grapes, followed by an in-depth discussion on different growing and production styles. Appetizers will also be served.

Dr. Tel-Oren ("Dr. T"), the President and founder of Ecopolitan and of the Functional & Dental Health (FDH) Foundation, as well as President Emeritus and Professor at the University of Natural Medicine, Santa Fe, NM and President of Integrated HealthCare Clinics, Inc., has been traveling extensively in the last several years, lecturing in many countries and cities, and training doctors, dentists, and nurses to integrate nutritional, preventive, and functional medicine into their practices. He is also educating the public about important holistic, scientific health care concepts employed by functional medicine, which utilizes advanced laboratory techniques that assess the causes for disease and the processes leading to it. This allows the practitioners to address health concerns more effectively, to prevent diseases from forming or progressing further (and frequently to reverse the process altogether), and to predict the susceptibility or sensitivity, or likelihood of developing disorders in the future.
In addition to assisting our management team with scientific, holistic, and business guidance, Dr. Tel-Oren oversees Ecopolitan's long-term development plans and the writing of our educational materials, as well as leads most of our Free Tuesday Meetings. He also guides the Nepal Treks (Yoga-Trek in November and Rhododendron-Bloom Trek in March) plus the Thailand Tropical Retreats in the winter, under the auspices of his PELC Foundation (pelc) and the FDH Foundation , both functioning as agents for the University's non-profit activities. He is seeing patients just one or two days each month , plus does laboratory tests when indicated for his patients and for other doctors' referred patients. 3. Free Information Meetings (Every Tuesday 6-8+ PM, Upstairs).
Join us for free lectures, discussions, or socializing. The presentations begin sharply at 6:30 PM- please come at 6 PM to meet others, wind down, and have a drink (organic NSA wine, smoothie, or fresh juice...) or a snack (optional). If you wish, you can order from the restaurant before the meeting and we will bring your order upstairsto you. Or, you can just sit and relax, since no purchase is necessary.

If you belong to (or if you know someone belonging to) a socially-responsible, environmentally friendly, community oriented, sustainability-aware, or health-related organization (preferably but not necessarily a non-profit company), please let us know if you need a special meeting area that can hold up to 50 people (lecture format), 30 people (dinner/table format), or 12 people (yoga/active format).
