Eco-Artist of the Month
Starting June 1st, 2005, Ecopolitan Restaurant now serves as an
Eco-Art Gallery, lending a voice to artists who work sustainably,
selecting recycled materials or reusable, non-depleting resources, or
using natural and non-toxic materials, or expressing thoughts and ideas
that support environmental activism in content and substance. Artists
who use part of their income to support sustainable, ecological, or
health-promoting, disease-preventing projects, or who are themselves
engaged in social or ecological activism, may also qualify to have
their art exhibited at Ecopolitan. We hope that the Ecopolitan
customers will support our Eco-ArtistsÂ’ important work
Our first exhibition is by Eco-Artist Cori Saraf. Born and raised in
Israel, Cori has always had a strong affinity to art. Her love of art
was placed on hold while she pursued a career in Physical Therapy. Six
years ago Cori decided to quit her career and homeschool her three
children. Spending more time at home (and having another child while at
it) has provided her with the opportunity to explore different forms of
art media. She found her passion in using old magazines to form
hand-torn authentic collage figures. She also makes cards featuring
fruits and vegetables (available at Ecopolitan), and made the payment
folders for Ecopolitan. Cori had several exhibits of her work in
Appleton, Wisconsin, and an ongoing exhibit at Ecopolitan. Cori
maintains a vegan diet and lifestyle, and enjoys organic gardening in
her small back yard. She is involved with the local La Leche group,
supporting women in breastfeeding. With her family members, Cori learns
and applies the principles of sustainable and simple living.
